JW Marriott Dallas Arts District Promotes Miguel Antonio to Executive Chef

JW Marriott Dallas Arts District announces Miguel Antonio has been appointed Executive Chef for the hotel's three food and beverage outlets, including the signature ranch-to-table restaurant now known as Montage. Chef Antonio's vision of elevated, yet approachable dishes can be experienced through the now available fall and winter menu, available featuring seasonal ingredients and globally inspired flavors.

Born in Tampico, Mexico, and trained in the United States, Antonio is a graduate of the Le Cordon Bleu Institute of Culinary Arts in Dallas. He originally joined the JW Marriott team in May of 2023 as Senior Sous Chef, shaping the hotel's initial food and beverage offerings under the leadership of former Executive Chef Jonah Friedmann. A fixture in Dallas' most prominent kitchens, Antonio has cooked at Five Sixty by Wolfgang Puck, Hotel Crescent Court, and served for six years as Senior Sous Chef at Fearing's under Chef du Cuisine Mike Matis.

The hotel's signature restaurant will now be known as Montage, reflecting the new chef's approach to combining many different ingredients to create new, unexpected dining experiences. Additionally, the new name echoes the diverse offerings of its Arts District location, where patrons enjoy a variety of artistic expressions—visual arts, dance, music, and more.

For those attending performances in the Arts District, Montage offers a $75 per person prix fixe menu, featuring a starter, main course and dessert. Tables seated by 5:30 p.m. are able to depart by 7:00 p.m. to attend their engagements.

Highlights from Montage's new menus include a foie gras torchon topped with cinnamon sugar buñuelos, fresno chile jam, and bitter greens, honey glazed quail served with mushroom pureé, beluga lentils, braised collard greens, and infused with Flamingo Estate California Wildflower Honey created exclusively for JW Marriott, smoked ora king salmon with pumpkin pureé, Meyer lemon beurre blanc, and finished with pumpkin seed oil. The restaurant's dry-aged beef program continues through the fall and winter menu with the addition of seasonal accompaniments including caramelized celeriac pureé, bourbon glazed sweet potato, and bone marrow infused creamed corn.

Those enjoying a weekend in the Arts District may enjoy brunch at Montage on Saturdays and Sundays with the additions of a prosciutto and manchego scramble, pumpkin spice banana pancakes and apple cider steel cut oatmeal. New lunch menu items include potato leek soup, cavatelli cacio e pepe, and a Southwest chicken wrap served in a chipotle tortilla with jalapeño gaufrette potatoes. Several new seasonal cocktails have been introduced to the Montage menu including those made with the Flamingo Estate California Wildflower Honey.

Dishes that have become local favorites including the acknowledge the corn starter with jalapeño infused cornbread and seasonal accompaniments, onion soup served inside a hollowed onion, and the ‘green circle' half chicken will remain on the Montage menu.

"The harvest and holiday seasons invoke a sense of nostalgia and a desire for warm, comforting spices," Antonio said. "These new dishes invite guests to explore new presentations of old favorites and to be surprised by new flavors that showcase the bounty of locally available ingredients."

Nestled amidst the Dallas skyline, Montage is located in the heart of the United States' largest contiguous arts district. Floor to ceiling windows along the perimeter of the space offer ideal views of the surrounding area with stunning sunset views. The restaurant includes a soft seating lounge, 20-seat bar, and private dining space ideal for hosting meaningful moments with family or colleagues throughout the holidays. Cloaked in velvet curtains, Montage's private dining space can be reserved for intimate gatherings including business meals, family gatherings and holiday celebrations, rehearsal dinners, and more.
