CANCUN, MX. February 13, 2017 - Grand Fiesta Americana Coral Beach is pleased to announce the resort's newly appointed Executive Chef Sergio Zarate. With twenty years of culinary experience, Zarate is responsible for all of the property's food and beverage operations, ensuring an impeccable standard of luxury quality and service. For the past two years, Zarate has managed the resort's restaurants and extensive banquet facilities, which often times hosts multiple events in one day. Additionally, he was a host Chef for the Wine and Food Festival, Cancun-Riviera Maya in 2015 and 2016.

Previously, Zarate held executive chef positions at resorts throughout the region including Fairmont Hotels & Resorts Mayakoba, and collaborated at AAA Five Diamond restaurants, such as The Club Grill and Fantino at The Ritz Carlton. He also had the honor of cooking for the royal family of Bahrain as their private chef. Zarate's technique is extremely ingredient focused and he constantly searches for new products and develops new recipes. This passion shines through his dishes, as he experiments with exciting ways to incorporate fresh and seasonal ingredients. "My motivation is always driven by creativity and in various forms. I am very fond of music, art, and nature and inspired by the senses - smell, touch, taste and color".

During Zarate's first few months as Executive Chef, he launched a new menu at Coral Beach's French Mediterranean Restaurant Le Basilic, one of the few restaurants in Mexico to hold the AAA Five Diamond distinction. Guests dining at the restaurant enjoy a unique culinary experience while watching a local Mexican artist's work come to life against the backdrop of live jazz, ultimately combining Zarate's enthusiasm for the arts and love of mouth-watering cuisine.

Those looking to indulge their taste buds will enjoy Le Basilic's new menu highlights which include: Lobster Escallope With White Cabbage Served With An Orange Reduction And Currents In A Basil Sauce; Foie Gras, Mushrooms And Truffle Ravioli Served With Duck Jus And Milk Emulsion; Grouper Fillet Served With Fig Compote And Asparagus In A White Wine And Tarragon Roasted Yellow Pepper Sauce. Zarate's new menu allows guests to choose from an array of inventive, French-inspired seafood, meats, salads and vegetarian dishes.

Le Basilic is open Monday through Saturday from 6:30PM to 11:00PM for dinner and requires elegant attire.
