Executive Chef Chris Cummer Brings Creative Dishes and Local Flavors to New Summer Menu

NEW YORK, NY. June 23, 2015 - Andaz Wall Street has introduced a new summer menu by Executive Chef Chris Cummer for Dina Rata, the property's onsite restaurant and bar in the heart of New York's Financial District. Popular with both guests and local New York City residents, Dina Rata offers upscale American bistro cuisine and creative cocktails with an emphasis on seasonal dishes and locally sourced ingredients.

Chef Cummer worked with over 60 local farms to conceptualize and execute the new menu, which celebrates the best of the summer season and emphasizes a balance between plant-based proteins and meat-based proteins with seasonal produce, organic meats and an abundance of fresh vegetables. Highlights on the dinner menu include Small Bites including Roasted Spring Garlic and Chard Dip and Smoked Salmon Belly Spread with beet mustard and heath crisp, as well as Large Bites such as NY Grilled Cheese with Beecher's flagship cheese, strawberry and rhubarb jam on raisin pecan bread; Burrata Kale Salad with young kale, chard, blueberries, burrata cheese and Catskill honey vinaigrette; Veal Cheek Ragu Papardelle and Amish Chicken Breast with kohlrabi farro and blueberry chipoltle jam.

The new lunch menu dedicates an entire section to Burger Blends including the Carnivore made with grass-fed beef, smoked Beecher's flagship cheese and bacon; the Omnivore made with grass-fed beef blended with maitake, oyster and cremini mushrooms with white cheddar; and the Herbivore made with fava beans, ramps, chard, pea shoots, mushrooms and sweet potato flour. The breakfast menu emphasizes local ingredients with dishes such as the Roasted Jersey Asparagus with organic baked eggs, golden beets, wild mushrooms and frantoia extra virgin olive oil and the Yogurt Parfait with Greek yogurt, passion fruit coulis, seasonal fruit, local honey and homemade granola.

“My inspiration for the new summer menus came from my philosophy of cooking regional cuisine with a focus on sustainability, seasonality, innovation and local culinary flavor,” said Chef Cummer. “I put a strong emphasis on working with fresh, local vegetables and plant-based proteins and made sure this mantra came through in the different dishes.”

Chef Cummer brings over 18 years of culinary experience to Andaz Wall Street. Cummer started his culinary career in Louisiana working at multiple restaurants and catering venues then joined the Hyatt family in 2007 as Banquet Chef at Hyatt Regency Lost Pines where he spent three years before moving on to Hyatt Regency Dallas as Chef de Cuisine. Prior to joining Andaz Wall Street, Cummer spent two years at Hyatt Regency Jersey City as Executive Sous Chef. Throughout his career, Cummer has grown deep roots in his surrounding communities. He has participated in multiple urban gardening ventures and has actively developed partnerships with farmers, fishmongers and other artisans.
