Internationally Renowned French Chef Joins Marriott Team

. October 18, 2011

Queensland, Australia - 17 October 2011 - The award-winning Surfers Paradise Marriott Resort and Spa has welcomed renowned French Sous Chef, Eric Henck, who heads up the resort's new all day dining restaurant, Citrique.

Citrique is part of the resort's $20 million refurbishment and offers an interactive dining experience based on four dining zones and eight different culinary concepts.

Mr. Henck brings a wealth of international experience to the Marriott following long serving stints at other company destinations - the prestigious Ritz Carlton Grand Cayman in the Caribbean and The Ritz Carlton Amelia Island in Florida. He also boasts years of fine-dining culinary experience having worked in several Michelin star restaurants in France, Germany and Brazil.

Marriott's General Manager Mr Peter Brampton says the resort is thrilled to have Eric on board as Sous Chef. "Eric brings a wealth of experience, fresh ideas and flare to the team," he said. "He has worked in some of the world's most highly regarded kitchens and I have no doubt that he will exceed all guest expectations."

Mr. Henck says he is excited with the new role and thoroughly enjoying welcoming guests to the new restaurant. "I'm thrilled with my appointment at the Marriott and look forward to showcasing an array of international flavours on the new menus at Citrique," he said. "Citrique features four different dining zones, a Cold Zone where guests can indulge in fresh seafood, sushi, salads, deli-style cured meats, antipasto and cheeses; a Hot Zone that will offer a selection of European dishes, exotic curries and a Yum Cha station that will feature an array of Asian dishes.

"The Grill Zone will offer a selection of Indonesian style satays and roast meats, while the Decadence Zone features an ice-cream station complete with a condiments bar and hand crafted desserts prepared by the pastry team. South East Queensland is home to an abundance of good quality, local produce and I look forward to focusing on those natural flavours while implementing some unique cooking methods and textures to create dishes that will take our diners on a culinary journey like no other. "It's an extremely exciting time at the resort and I look forward to working with the exceptional team of Marriott chefs to ensure we present innovative dining experiences each and every day."

Citrique opened its doors in late August on the ground floor of the newly renovated, luxurious resort and features interactive dining and an exceptional new a la carte menu.
