Mark Knipp Appointed Exec Chef at the Peacock Restaurant & Lounge at the Inn at 202 Dover

EASTON, MD (January 14, 2010) — Mark Knipp , a former Chef de Partie at The Inn at Little Washington and most recently the Executive Sous Chef at Wheatleigh in Lenox, MA, has been appointed Executive Chef at the Peacock Restaurant & Lounge at the Inn at 202 Dover .

Knipp, who worked at the nearby Inn at Little Washington from 2005 to 2007, was trained at the New England Culinary Institute and has also held positions at Renoir at the Mirage Resort in Las Vegas, and the Seven Stars at The Worthington Inn in Ohio.

Having come from such a culinary powerhouse as The Inn at Little Washington, Chef Knipp says his experience there was "a sharpening of all the senses" and it enabled him to "gain a greater awareness of how decisions in the kitchen can invigorate the opulence of the entire property's performance."

Chef Knipp owes his love of cooking to his grandmother. He recounts how in his pre-Kindergarten days, his grandmother would insist on midday breaks from neighborhood mischief, so he would spend 30 to 40 minutes at her side preparing a simple lunch and then sit down to watch Julia Child. "I spent my formative years being her sous chef, and to this day I am still haunted by the brilliance of my grandmother's lamb and pork roasts!"

Knipp adds that the decision to become a chef was "a necessary balance of endurance, team aspiration, creative exploration, and getting paid to follow an obsession." His approach toward food today is based upon the fact that "living things have given their lives to us without choice. The essence of those lives must be respected and presented with grace."

In creating his new menu at the Peacock Restaurant & Lounge at the Inn at 202 Dover, Chef Knipp said it is being driven by the bounty of the season. It is his goal to be known for providing an integrity toward seasonal offerings, to bolster the appreciation of the area's local farming and fishing, and the collective spirit of the Easton Restaurant Community.

Chef Knipp's new menu features such winter signature dishes as Seared Hudson Valley Foie Gras with Banana Bread and Finished with Preserved Apricot Gastrique, Wild Chesapeake Oyster Frites served with Jicama Lemongrass Slaw with Pancetta and Saffron Aioli, Crisp Skin Rainbow Trout, Kiln Dried Tomato and Meyer Lemon Risotto on a Citrus Landscape, Braised Short Rib of Bison, Roasted Root Vegetables and Buttermilk Dumplings with a Zinfandel Reduction, and, Spiced Apple Galette with Hot Buttered Rum.
