Evan Francois Appointed Exec Chef at Hotel Jerome

Evan Francois has been appointed executive chef at Hotel Jerome, A RockResort in Aspen, CO. In his new position, Francois will oversee the catering and cuisine of the hotel's dining venues including The Garden Terrace, The Library lounge and the renowned J-Bar.

Most recently, Francois served as executive sous chef at Hotel Jerome for more than three years. During this time, he assisted in training new chefs and implemented new operational systems in the kitchen. Prior to his tenure in Aspen, Francois spent more than five years at Romano's in Cedarburg, WI as executive chef and general manager. His role as a founding cook led to the success of the restaurant's opening and ultimate expansion. Francois began his culinary career in 2004 as sous chef at the American Club Resort in Kohler, WI. He holds an Occupational Studies Degree at Le Cordon Bleu Culinary Arts at the Scottsdale Culinary Institute in Scottsdale, AZ.

In his leadership position at Hotel Jerome, Francois will utilize his French culinary training combined with new techniques to showcase classic recipes in inventive ways. He will focus on using local, sustainable ingredients. He envisions each dining venue to have its own identity: bistro-style lunch at The Garden Terrace, homemade classic bar food at J-Bar and shared plates and tapas at The Library.
