Concorde Appoints New F&B Director at Hotel Martinez

NOVEMBER 23, 2009 - Concorde Hotels & Resorts has recently appointed Cedric Cauvelier as the Director of Food & Beverage of the legendary Hotel Martinez in Cannes, France. Cauvelier will oversee the management of the 200-staff F&B department, which includes room service and special events, as well as the resort's four dining venues including the Michelin star La Palme d'Or, Le Relais, Zplage and Bar L'Amiral.

Cauvelier's culinary experience stems from numerous F&B positions. He joins Hotel Martinez from the Shagri-la Hotel Tokyo, where he also served as Director of Food & Beverage. Previously, he was Associate Food & Beverage Director of the Grand Hyatt Tokyo, which boasts seven restaurants. In 2002, Cauvelier opened a new restaurant, Bali Deli in Indonesia, adding the title of Restaurateur to his culinary accolades. Additionally, Cauvelier has held leadership positions on culinary teams at luxury hotels in France, including Hotel La Mandarine in Saint-Tropez and Metropole Hotel in Beaulieu-sur-Mer. He also worked in London at chic The Ivy restaurant as well as renowned, Michelin star restaurants Le Gavroche and Nobu Matsuhia.
