Dine, a Classic 1940's-style Eatery to Open December 1 in Chicago's Growing West Loop

CHICAGO, IL, December 1, 2005. Chicago's most anticipated new restaurant, Dine, 733 West Madison at Halsted, will open on December 1. Billed as a 1940's style American eatery, Dine is offering a tasty combination of classic American dishes and contemporary comfort food. "It's the kind of restaurant that Chicagoans particularly enjoy - classy yet casual, stylish and comfortable with delicious food that is familiar but with a creative flair", says executive chef Trevor Hoyte.

Dine's buzz began months ago because Hoyte has eagerly previewed its admirable cuisine at numerous events around town-always earning high praise. According to on-lookers, Dine promises to be one of Chicago's favorites for the coming year.

The talented Hoyte, formerly of Caliterra and TRU in Chicago, will be joined in the kitchen by pastry chef Kate Milashus, who developed her pastry style at D. Kelly, Zealous and Pili.Pili, all highly regarded restaurants. Hoyte and Milashus each have creative, eclectic styles that encourage them to take liberty with the idea of "retro."

"We're trying to be careful not to be pigeon-holed into a particular style. 1940's retro can be interpreted in different ways," he says. Hoyte's definition of 1940's retro comes across as a stylized comfort food; his restaurant history shines through with Dine's contemporary twists on the classics. "We're going to have fun with Dine," he declared. "It will have great appeal to a variety of customers. Our food will be easily understood, simple and straightforward with emphasis on taste and presentation."

Same menu all day and night

Dine will be open for breakfast, lunch and dinner as well as for late night cocktails and dining. The afternoon and night menus are the same, giving customers variety of choice and popular prices from $9 to $29 making it attractive to a local, loyal crowd.

About the menu

Classic starters include Mini Osso Bucco; Market Oysters with Mignonette sauce; Jumbo Lump Crab Cakes; Smoked Gouda Quesadilla; Tempura Shrimp with Orange Peanut Sauce; and Tortilla Chips with a Trio of Dipping Sauces.

Signature soup and salad selections include Lobster & Corn Bisque; the Dine Wedge; Asparagus Salad; and Lobster and Papaya. Sandwich selections include a special Petite Trio of Burgers.

Pasta entrees include Pappardelle with Proscuitto di Parma and arugula; Linguine with Asparagus & Mushrooms available with chicken or shrimp, and Bolognese.

Fish selections include Seared Salmon with Black rice & Fennel Relish; Pan Seared Grouper with Stewed Leek Ragout; and Mushroom Crusted Tuna with Soy Red Wine Reduction.

Meat and poultry lovers will have a wide selection. Among the choices are Seared Pork Tenderloin with black pepper & garlic polenta; creative takes on Crispy Fried Chicken and Hearty Meatloaf, plus the savory Duo of Lamb Rack and braised lamb shanks, and Braised Short Ribs.

Steak lovers will enjoy the Grilled 16 oz. Rib eye Steak with Herb tossed Steak Fries and Grilled Beef Tenderloin with Potato Gratin.

In keeping with the 1940's retro theme, Dine will offer a sublime assortment of contemporary interpretations of classic desserts. The signature dessert is Red Velvet Cake, layered with cream cheese frosting, served with pecan praline and strawberry compote, presented on its own pedestal. Other mouth watering treats include Butterscotch Cr?me Brul?e served with house made caramel corn; Lemon Meringue Pie served with raspberry sorbet; PB & J banana bread sandwich, peanut butter buttercream, a four fruit preserve, peanut butter swirl ice cream, peanut brittle; Coffee & Donuts, four assorted homemade donut holes, espresso milkshake; Root Beer Float, ginger & chocolate ice creams, malted whipped cream, gingersnap cookies; S'more Cake, baked chocolate mousse, toasted marshmallow, cr?me fraiche ice cream; and a Malted Milk Ball, milk chocolate & white chocolate malted mousses, a very thin layer of flourless chocolate cake, roasted banana ice cream, and strawberry sorbet.

About the design

Dine was designed by the internationally-renowned Puccini Group, based in San Francisco. According to Creative Director Robert Polacek, Dine will have a unique look and feel, showcasing classic American d?cor that has an earthy color palette and vintage textural elements such as tin, tweed, mohair, leather and wool. "Our hope is that diners will feel at home and be comfortable. Unlike a lot of restaurants, Dine is designed for comfort with lounge areas where we encourage people to mingle, eat and drink." Rich shades of dark umber, bottle green, crimson, toffee, poppy, forest green and cardinal red warm the environment. The dining room will be laid out with leather banquettes along the perimeter and bistro-style tables in the interior. Guests also are welcome to dine in the lively bar area.

The space is built on various elevations so guests can see and be seen if they wish. They also have the option of semi-private and private dining areas.

A spacious exposition kitchen overlooks the main dining area; a handsome tin ceiling is reminiscent of 1940s design and a new built-to-last terrazzo floor that was common then but rarely used today because of its expense, makes-up the lower level with a rich Brazilian Cherry wood floor on the raised level. They've even custom build a zinc bar which curves around the room.

Located at the intersection of Halsted and Madison, Dine is in one of Chicago's most ideal locations. The area is fashionable, yet down-to-earth and diversified, reflecting the continuing rejuvenation of the Greektown and West Loop areas. The restaurant intends to become a comfortable regular spot for this wide local audience.

Dine is located at 733 Madison Ave., at the intersection of Halsted and Madison in Chicago, adjacent to the Crowne Plaza Chicago Metro Hotel. The restaurant, a stylish 1940's style eatery, is open for breakfast, lunch and dinner. Breakfast is served from 6 a.m. to 10:30 a.m. Lunch and dinner are served from 11 a.m. to 10 p.m. Sunday through Thursday; and from 11 a.m. to 11 p.m. on Fridays and Saturdays.
