Sleeping Lady Mountain Retreat Names Executive Chef

AUGUST 13, 2008. Sleeping Lady Mountain Retreat has announced the addition of Kenneth MacDonald as Executive Chef. MacDonald will be responsible for overseeing Sleeping Lady's food and beverage operations, including the Kingfisher Dining Lodge, O'Grady's Pantry and The Grotto. MacDonald brings with him more than 20 years of culinary experience.

Originally hailing from Glasgow, Scotland, MacDonald has led culinary operations for hotels and restaurants across the globe. From the City Tattersals Members Club in Sydney, Australia to the Pan Pacific Sonargoan Hotel in Dhaka, Bangladesh to several hotels throughout both South Africa and India - MacDonald has cooked for royalty, celebrities and heads of state. Most recently, MacDonald led the kitchens at the Esteban Restaurant at the Casa Munras Hotel in Monterey, California.

Under MacDonald's guidance, the Kingfisher Dining Lodge will enhance service offerings, including preset linens and cutlery, served beverages and select plated menu items (rather than buffet style) and will add action stations, including an omelet bar and carving station. Organic and locally sourced ingredients, many from Sleeping Lady's own full-acre organic garden, will continue to be a highlight of the menu. Additionally, O'Grady's pantry, which serves soups, salads and sandwiches, and the Grotto, serving beer, wine and spirits, will enhance their offerings.

In addition to changes to its culinary offerings, Sleeping Lady will also undergo room upgrades throughout 2008 as they pursue the Leadership in Energy and Environmental Design (LEED) Certification for Existing Buildings. The LEED Green Building Rating System, developed by the U.S. Green Building Council (USGBC), provides standards for environmentally sustainable building and maintenance.
