Hot New Chef, Cool New Menu

Trey Hartinger, 26 (formerly of San Diego's Stingaree Restaurant), was recently appointed executive chef of Restaurant at The Pearl, the popular eatery, bar and lounge. This dynamic, young talent has introduced a delicious, seasonal menu of rustic, California cuisine. Chef Trey's approach is simple, straightforward and satisfying, made better through relationships with distinguished roster local farms and producers. Signature appetizers include candied pork belly with ginger bok choy and Maker's Mark sweetbreads with organic greens. Entree highlights include Kurobuta pork chops with sourdough-boursin bread pudding, and skin-on salmon with dill-lemon creme fraiche. Big Splash: Dive-In Theatre

Dive-In Theatre, The Pearl's flagship weekly event, is a Wednesday night "cinema social" combining eclectic film choices, food and drink and light conversation.
