Paragon at Foxwoods Introduces Fine Dining Menu
APRIL 11, 2008. Beginning Thursday, April 17, guests dining in Paragon at Foxwoods Resort Casino will be treated to a delectable new menu featuring Continental- and Asian- inspired dishes prepared with the finest and freshest ingredients available. Prepared by Chef de Cuisine, Scott Mickelson, Paragon's new menu will offer entrees ranging from Alaskan Black Cod with pink grapefruit, shallots, and fresh thyme to Pan Roasted Poussin with gingered mushroom soy smear, buttered mustard green and crisp shiitake. In addition to exceptional new cuisine, the menu will feature more approachably priced options such as Spiced Duck Purses with broccoli, maitake and minted plum dip for $12, Mushroom Essence Soup for $9 and Wood Grilled Panamanian White Shrimp with cheesy grits, black bean puree and queso fresco for $26.
Guests will enjoy the new array of appetizers, soups and salads available including Steak Tartare for $18, Seared Ahi with Iceberg for $14, Moroccan Grilled Quail for $14, Lobster "Chowder" for $10 and Goat Cheese Salad for $10. Tableside Service is also available for parties of two or more looking to start their meal with fresh Baby Spinach Salad. Prepared tableside this dish comes complete with hot bacon dressing, enoki mushrooms, maytag blue cheese, apples, candied walnuts and crisp polenta croutons for $12 per person.
For the main course guests can choose from a variety of opulent entrees ranging in price from $26 to $85 including Rare Seared Tuna Steak served with basil-mango sticky rice, chef's hoisin and crunchy peas for $28, Wood Grilled Lobster with black pasta, snow puff mushrooms, green onions, in a lemon-saffron oil for $85, Veal Loin Chop with olive oil whipped gold potatoes and tapenade-tomato coulis for $42 or Black Angus Sirloin coffee crusted with smoked salt, mustard cr`eme fraiche, and hot sprout salad for $38.
