NEW HAMPSHIRE, September 26, 2006. The BALSAMS, the grand mountain resort in the heart of the Great North Woods is playing host this fall to some of the country's most popular chefs, giving guests the opportunity to savor extraordinary gourmet fare, meet acclaimed chefs, and learn some culinary tips just in time for the holidays.

The 2006 Visiting Chef weekends are scheduled for October 20-22, October 27-29, November 3-5, November 10-12, and November 17-19.

The BALSAMS Visiting Chef Series are priced from $119 per person, per night, based on double occupancy.

The BALSAMS Culinary Weekends with Visiting Chefs program is as follows:

The weekend kicks off Friday evening with a chef reception. As a fire roars in the background, guests will gather in the lounge, sip cocktails and meet the visiting chef. Dinner on Friday evening will be in the Dining Room.

Saturday schedule:

10:30am - 11:30am Cooking demo with the visiting Chef.

2:00pm - 3:00pm Cooking demo with a member of The BALSAMS culinary brigade

3:30pm - 4:30pm Wine tasting program

6:00pm Saturday dinner in the Dining Room will feature five courses, prepared by the visiting chef with the help of The BALSAMS culinary team. The table d'hote menu will offer an appetizer, salad, soup, entr'ee and dessert.

The weekend will conclude Sunday morning with a jazz brunch featuring the wonderful sounds of the Rick Erwin band.

October 20, 2006: New England Seafood Festival with Chef Kevin Doherty

Chef Doherty is the executive chef for Delaware North Sport service at the TD Banknorth Garden in Boston. Prior to joining the DNC staff, Doherty worked for the Sheraton's Starwood Hotels & Resorts in Boston. In 2006 the American Culinary Federation named him "Northeast Regional Chef of the Year".

October 27, 2006: Modern Cuisine with Chef Carlos de Marco

Chef De Marco is the chef/owner of 333 Belrose in Philadelphia, an inviting and gracious spot set in a former stable dating back to Colonial Times. The menu at The Belrose features innovative, seasonal, American cuisine.

November 3, 2006: Taste of the Islands with Roger Dikon

Chef Dikon currently resides in southern Florida where he was most recently the executive chef at the PGA Resort in Palm Beach, Florida. Before relocating to Florida, Chef Dikon spent 18 years in Hawaii as the executive chef at the Maui Prince Hotel.

November 10, 2006: Italian Countryside with Chef Jack Chiaro ECE, CCE, AAC

Chef Chiaro is a member of the prestigious Escoffier Society and the American Academy of Chefs. In 1990, he was selected Rhode Island "Chef of the Year". He is currently an Associate Professor at Johnson & Wales University.

November 19, 2006: A Celebration of Harvest Noveau Beaujolais with Martin Gagne

Hailed as one of Food Magazine's "Top Culinarians to Watch in the 1990's," Chef Gagne is currently the Executive Chef at the Inn at St. Peter's Village in scenic Chester County, Pennsylvania. Gagne has a stellar reputation nationally and internationally for creating inventive and artistic dishes with unique personality.
