Carillon Miami Wellness Resort Appoints Ryan Fletcher as Director of Food & Beverage
Carillon Miami Wellness Resort announces the appointment of Ryan Fletcher as the Director of Food and Beverage across the luxurious beachfront destination's restaurants and takeaway outlets, including Michelin-starred Tambourine Room by Tristan Brandt; contemporary Mediterranean restaurant The Strand; The Corner Store café and juice bar; the Seaglass Café at the Cabana Pool; and all in-suite dining and banqueting for over 15,000 square feet of indoor and outdoor event space.
A return engagement—although his first time serving in this role, Fletcher also oversees guest satisfaction, working closely with the entire food and beverage team to enhance hospitality and create memorable experiences that keep resort guests and locals eager to return.

Fletcher rejoined Carillon Miami Wellness Resort from InterContinental Miami, where, as Assistant Director of Food and Beverage, he focused on enhancing the guest experience at six food and beverage outlets and worked with marketing teams to drive revenue growth. He joined the InterContinental from Carillon Miami Wellness Resort, where, as Director of Pool and Beach, he managed all operations for the pools and beach outlets in one of Miami's largest stretches of beachfront. Fletcher's performance was noted glowingly with a Leader of the Quarter award in early 2021.
Previously, Fletcher spent four years at Trump National Doral in Miami, starting as Room Service and Minibar Manager in 2017 and departing in 2021 as Director of Pool and Recreation, with a turn as Assistant General Manager of Champions Restaurant in between. Hailing originally from Broward, Florida, Fletcher earned an Associate Degree in Business Administration from Broward College, Davie, as well as a Certificate in Hospitality and Tourism from Florida Atlantic University. Right at home residing in Miami, Fletcher enjoys soaking up sunshine and spending his downtime following auto sports, capturing photography and building computers. More than anything, he enjoys spending time with his family, especially his newborn daughter.
