Hotel El Ganzo Appoints Carlos Peregrina Serralde as Executive Chef
Hotel El Ganzo, San Jose del Cabo's boutique culture hub, has appointed new Executive Chef Carlos Peregrina Serralde to lead its culinary offerings. Peregrina´s hiring follows the debut of El Ganzo's signature wine, El Ganzo Red Blend, which is locally produced in Ensenada and served at the hotel. The changes continue El Ganzo's focus on sustainable, regional cuisine, as the new Chef brings his passion for incorporating locally sourced ingredients to his menus.
In line with El Ganzo's ever-evolving attitude, the hotel's gastronomy program has grown to offer sustainable cocktails and trends that incorporate earth-friendly methods. Sourcing vegetables, herbs, and microgreens from the hotel's in-house organic garden, Peregrina Serralde brings a new element to El Ganzo's plate of four eateries and two bars.

The new Chef will helm signature restaurant Ganzo Downstairs, a chic, all-day bistro; Gachoo Sushi Bar, specializing in raw cuisine; El Ganzo de Playa Beach Club, serving casual, seaside fare; The Container, a unique shipping-container-housed outdoor Mexican eatery; and Rooftop bar, a laidback lounge shaking signature cocktails amid shifting music sets.
Peregrina Serralde brings more than a decade of restaurant and tourism experience throughout Mexico and the U.S. to his post at El Ganzo. Previously, the Chef held the title of Casino Chef de Cuisine at The Greenbrier Resort at White Sulphur Springs in West Virginia and various Chef positions at Now Jade Hotel in Riviera Maya, ME by Melia in Cancun and Tinto Restaurant and Wine Cellar in Cancun. He holds a Bachelor's degree in Culinary Arts and Administration from Universidad del Caribe in Cancun.
