University of San Francisco Hosts 23rd Annual Hospitality Industry Symposium

SAN FRANCISCO - April 11, 2013 - The University of San Francisco (USF) is pleased to announce the 23rd annual Hospitality Industry Symposium will take place on Wednesday, April 24 at The Fairmont San Francisco (950 Mason Street). This year's symposium explores the changing world of hospitality from what people eat, to collaborative consumption (sharing economy), the term used to describe an economic model based on sharing, swapping, bartering, or trading as opposed to ownership, and how these topics are affecting the hospitality industry. The symposium is organized and hosted by USF s Department of Hospitality Management within the School of Management.

Our symposium reflects the practical, industry-oriented focus of USF s Department of Hospitality Management with seminars, panel discussions, and keynote speakers on topics facing today s industry, while exploring future directions, said David L. Jones, the department s administrative director. The purpose of this unique symposium is to give hospitality industry executives an opportunity to learn from the leading experts and collaborate on emerging trends.

The symposium kicks off with a panel discussion on eating habits today and how those habits affect menu creation. Featured representatives from CCD Innovation, Compass Group, Fairmont Hotels, Monterey Fish, and USF will grapple with food sourcing, obesity, and menu items for children.

The luncheon keynote will address the growing phenomenon of collaborate consumption. The speakers include:

Brian Chesky, co-founder and CEO of Airbnb, a community marketplace for people to list, discover, and book unique accommodations around the world online or from a mobile phone. Rachel Botsman, author of What s Mine is Yours: The Rise of Collaborative Consumption the book that charts the collaborate consumption movement. Botsman will join via videoconference from Sydney, Australia.
