Rock n' Roll Chef Kerry Simon Opens New Restaurant Concept at All-Inclusive Beachfront Resort

MIAMI, FL - August 20, 2012 - Dubbed the “Rock n' Roll Chef” by Rolling Stone magazine, Chef Kerry Simon announces a fitting partnership with All Inclusive Collection's Hard Rock Hotel & Casino Punta Cana. Simon will open an upscale restaurant, Mansion by Simon, at the all-inclusive Caribbean resort—the first all inclusive Hard Rock Hotel in the world—in winter 2012.

Renown interior design firm 555 International, headed by James Geier, imagined a restaurant design to reflect the home of a rock n' roll icon. Featuring multiple rooms including a dining room, living room, bedroom, bathroom, library, studio and patio, “Mansion by Simon” invites diners to take a peek behind the curtain of a rockstar's decadent abode. The design features a mix of glass and stone, with larger-than-life portraits of Chef Simon, massive thrones that also serve as dining chairs and eye-catching art.

The cuisine at Mansion by Simon will reflect Simon's signature contemporary American foundation with Caribbean influences. Simon is committed to using natural meats and hand selects local, organic produce for his dishes, bringing a fresh approach to cuisine found in the Dominican Republic, whole featuring some of his signature offerings. The cocktail program will feature innovative cocktails that aim to surprise and delight the senses, highlighting a wide selection of local and imported rum varieties. The restaurant will also boast a rum sommelier that will be able to educate guests about the various rums, rum cocktails and how to best pair rum with food.
