New Menu at ANZU

July 26, 2005, San Francisco - Executive Chef Philippe Striffeler at Hotel Nikko San Francisco has introduced a new menu at the hotel's popular restaurant ANZU.

Created with fresh and seasonal ingredients, the new menu features some unusual lighter dishes like Tasmanian Salmon, Hawaiian Snapper, and Kahuku Prawns (North Shore Prawns - sweet), which compliment the summer months nicely.

"ANZU's core continues to be sushi and prime beef focusing on the 'East meets West' influence," says Chef Striffeler of the new menu. "All of the dishes have some hint or taste of Asia with the presentation focused on Asian grace and beauty."

"Hotel Nikko San Francisco is working with many local vendors and purchasing produce that is locally grown, as well as using Chicken and Duck from Petaluma, CA, which helps ensure the freshness and quality of our dishes," says Chef Striffeler.

Chef Striffeler began working with the hotel in 1996, and now oversees the entire Food and Beverage operation of Hotel Nikko San Francisco as Director of Food and Beverage, in addition to being the Executive Chef. He is credited with the emergence of Restaurant ANZU in 1999, including the creation of "the prime of land and sea" menu that still exists.

Born in Switzerland, Chef Striffeler has cooked for and managed restaurants in some of the finest luxury hotels around the globe. A graduate of the 'Ecole Professionelle de la Societ'e Industrielle et Commerciale in Lausanne, Switzerland, his early culinary education included two vital apprenticeships - one at the Hotel Des Voyageurs in Lausanne, and the other with famous Swiss Chef Norbert Ziojen. In France, Striffeler studied under the tutelage of renowned French Chefs Roger Verg'e and Jean Troisgros.

Diners at ANZU can also opt to eat at the restaurant's Sushi Bar where Master Sushi Chef, Kazuhito Takahashi, one of only a handful of Master Sushi Chefs in the United States, prepares sushi and sashimi. Patrons may also order one of ANZU's 50 signature sake martinis.

ANZU is open daily for breakfast, lunch and dinner. Reservations are suggested. Complete menus and more information about ANZU can be found at: www.restaurantanzu.com.
