Hyatt Regency Monterey Opens TusCA Ristorante
MONTEREY, CA, May 3, 2007. Following an extensive redesign, Hyatt Regency Monterey introduces an enticing new destination for both locals and visitors with the launch of TusCA Ristorante, a restaurant combining the hearty cuisine of Tuscany with the abundance of local, California ingredients; and, Fireplace Lounge, a warm and convivial space for enjoying live jazz and creative cocktails.

Inspired by the Tuscan region's emphasis on abundance, Chef Neil Dunn, formerly of Highlands Inn, Park Hyatt Carmel, presents authentic and sophisticated regional Italian dishes created from the wealth of locally and seasonally sourced California produce, meats and fish. Menu offerings and dish preparations will change frequently to reflect the best ingredients available from local purveyors through the seasons. TusCA's winter menu offers heartier Tuscan-inspired dishes, with highlights including Braised Lamb Shank, Stewed Mushrooms, Saut'eed Polenta and Rosemary, and Cacciucco, a Tuscan Fish Stew of prawns, calamari, Little Neck clams, mussels and daily fresh fish; the turn of Spring offers lighter options. Desserts promise favorites like Tiramisu, inspired creations such as Tangerine Granit'ee with Whipped Marscarpone, and various flavors of gelato, locally made at Santa Cruz' Gelato Mania. TusCA's design embodies the warmth and vibrancy of Monterey. A rich color palette, representative of the bold hues of local wines, flows throughout TusCA Ristorante with low banquettes that offer unobstructed views of the pristine display kitchen and Tuscan-inspired duo brick ovens.
Fireplace Lounge provides a comfortable, urban destination
With its seasonal, innovative cocktails, tempting appetizers and welcoming central fireplace, Fireplace Lounge's sophisticated ambiance invites visitors to take a moment's pause at any time of day. Chic yet comfortable couches and chairs grouped around the striking fireplace offer intimate conversational settings, in addition to sweeping views of the Pebble Beach Company's Championship Del Monte Golf Course. Friday and Saturday evenings promise live jazz involving a constantly changing lineup of artists led by local, beloved jazz performer, David Morwood and his band. Seats at the bar offer prime views of the music and the lounge's spacious atrium and open floor plan flows easily into the TusCA Wine Room.

A floor-to-ceiling display wine cellar created almost entirely of glass, The Wine Room showcases a collection of acclaimed regional and international wines and provides a unique space to enjoy a pre-dinner glass of wine. A cheese display presents items from the superb selection available in both the Fireplace Lounge and TusCA Ristorante. Compiled with the assistance of R. Kent Torrey, from the renowned The Cheese Shop in Carmel Valley, all the cheeses, which include some labels produced around the Monterey Peninsula, are hand-selected seasonally to showcase the finest and most interesting cheese available on the market.
