The St. Regis Bal Harbour Appoints Fabio La Monaca Director of Food and Beverage

Seasoned Leader and Certified Sommelier Brings Expertise and Passion to Luxury Resort Culinary Operations

MIAMI BEACH, FL. August 16, 2017 - The St. Regis Bal Harbour Resort, a AAA Five Diamond and Forbes Five-Star resort, has appointed Fabio La Monaca to the position of Director of Food & Beverage. A seasoned leader with more than 15 years of experience in culinary operations, La Monaca's passion for the art of great food and wine has driven his expertise, which spans an impressive range from fine dining within luxury hotels and wine stewarding, to of-the-moment dining trends such as gourmet food trucks. In his new role, La Monaca will oversee culinary operations of the iconic oceanfront property including Atlantikos, BH Burger Bar, The St. Regis Bar & Sushi Lounge, La Gourmandise and in-room dining.

Most recently, La Monanca served as assistant director of food and beverage at the Mandarin Oriental Hotel, Miami. While at the triple Forbes Five Star award winning property, he successfully managed a staff of 300 team members and implemented new programs that were both well received by guests and drove resort revenue such as oceanfront and poolside beer and cabana experiences and a wireless waiting push button system.

Prior to that, he held the position of Director of Restaurants at the Four Seasons Hotel, Miami, where he was also stepped in for a period as Acting Director of Food & Beverage. During his tenure, La Monaca played a significant role in supporting the successful opening of the modern steak house concept, Edge Steak & Bar. Additionally, he managed the resort's wildly popular array of gourmet food truck events. La Monaca holds deep experience within the portfolio of luxury hotels and resorts around the world, having held a variety of culinary management positions throughout his career.

A graduate of the Gustav-Heinemann College in Berlin and holding tremendous international experience, La Monaca is fluent in English, German, Italian and Spanish and is a certified sommelier, having received the distinction in 2006 from the Dallas Court of Master Sommeliers.
