SEATTLE, WA. December 1, 2016 - Noble House Hotels & Resorts, Ltd. (NHHR), a collection of luxury hotels and resorts, proudly announces the appointment of Derek Rosen as Executive Chef to Pelican Grand Beach Resort, located just steps from the Atlantic in Fort Lauderdale, Fla. In this role, Rosen will oversee all culinary operations for Pelican Grand and its signature waterfront restaurant, OCEAN2000 Restaurant & O2K Lounge, as well as banquets and special events.

With more than 21 years of extensive experience in the culinary field and hospitality industry, Chef Derek's passion stems from his rich Tennessee heritage and time as a pit master in several critically acclaimed Knoxville restaurants. Beginning at a young age, Chef Derek was inspired by his family, travel, and Tennessee southern cuisine, and he gained youthful experience running concessions and assisting with BBQ menus at Neyland Stadium. While working toward his associate degree in 2001 in Culinary Arts and Applied Science from Johnson & Wales University in Charleston, S.C., Chef Derek operated as a line cook and waiter at Elliot's on the Square, part of the Maverick Southern Kitchens family of restaurants.

Upon graduation, Chef Derek served in various chef positions at a number of notable Four Seasons Hotels and Resorts, including the Atlanta, Palm Beach, Palo Alto, San Francisco, Westlake Village and Maui properties. During his time with Four Seasons, Chef Derek built a strong foundation for his culinary journey working with many highly admired chefs, completing extensive training programs, which included learning South American, Indian and Thai cuisines. Today, Chef Derek continues to use his gastronomic background by incorporating local and indigenous ingredients while blending different food styles.
