Hyatt at the Bellevue Appoints New Chef De Cuisine

Ned Maddock Oversees XIX Nineteen Restaurant at Iconic Philadelphia Hotel

PHILADELPHIA, PA. June 23, 2016 - The newly renovated Hyatt at The Bellevue, located along the world-famous Avenue of the Arts in the heart of downtown Philadelphia, is delighted to announce the appointment of Ned Maddock as Chef de Cuisine. Maddock brings over a decade of culinary experience to his new position, most recently working as Executive Sous Chef of Lo Spiedo restaurant in Philadelphia. In his new role, Maddock will oversee and help develop the menu concept and culinary offerings for the property's renowned seasonal restaurant, XIX Nineteen, which features sweeping views of the city from the 19th floor of the hotel.

Chef de Cuisine Ned Maddock began his professional career while enrolled at the University of Wisconsin - Madison, where he worked in several local restaurants. After graduating in 2007, Chef Maddock moved to Chicago and secured a position as Friturier and Garde Manager at the Goose Island Brew Pub. From there, Chef Maddock worked his way up in the kitchens of several James Beard award-winning chefs in Chicago including Mindy Segal of Hot Chocolate Craft Food & Drink and Stephanie Izard of The Girl and The Goat where he served as Sous Chef for several years. After helping to open The Bedford restaurant and lounge in Wicker Park as Sous Chef in 2011 and conceptualizing the menu for the trendy nightlife spot, Maddock moved back to his home state of Pennsylvania where his experience and attention to detail earned him a spot with The Vetri Family restaurant group as Executive Sous Chef at Amis Trattoria in Philadelphia under the guided talent of Chef Brad Spence. Prior to joining the XIX Nineteen team, Maddock worked as Executive Sous Chef at Lo Spiedo, the newest restaurant under the Vetri umbrella.

At XIX Nineteen, Ned adds his own signature cooking style to the seasonal, farm-to-table menu, bringing in simple, fresh ingredients and strong flavors. Utilizing a combination of his own cooking philosophy and XIX Nineteen's local, seasonal flavor and upscale modern American cuisine, Maddock has added a variety of unique dishes to the menu for the summer season such as the Striped Bass with Grilled Lettuces, Olives and Almonds; Ribeye with Mushrooms, Potatoes and Salsa Verde; Charred Asparagus with Lemon Mayo, Hazelnuts and Mint; and Pork Loin with Pork Sugo, Fava Beans and Pickled Ramps.

With a passion for both cooking and charitable causes, Maddock has volunteered for the past four years at Alex's Lemonade Stand's Great Chefs Event, an event that has helped raise close to one million dollars each year to help fight childhood cancer. When in Chicago, Maddock participated in many events for non-profit organization Share Our Strength including Taste of the Nation® for No Kid Hungry, an acclaimed culinary event featuring the city's top chefs and restaurants, bars, mixologists, craft beers, wine and spirits. In his spare time, Maddock can be found cooking at home and spending time with family, his wife, and his dogs and cats.
