Hyatt Regency St. Louis at the Arch appoints New Pastry Chef

Julie Weldele Brings a Dash of Sweetness to Contemporary Downtown Hotel

ST. LOUIS, MO. August 11, 2015 - Hyatt Regency St. Louis at The Arch is pleased to announce the appointment of Julie Weldele as Pastry Chef to the property. A St. Louis native, Weldele brings over nine years of pastry arts experience, where she most recently taught a contemporary plated desserts class at a local college in Forest Park, St. Louis after leading the pastry program at Scape American Bistro and Crepes. In her new role, Weldele will oversee the development, creation and execution of all desserts for the hotel's two restaurants and banquets.

Weldele's interest in the art of desserts began with a casual cake-decorating class which ignited an instantaneous passion for the sweeter world. While working towards a certificate in Baking and Pastry Arts at St. Louis Community College at Forest Park, she took on the role as assistant pastry chef under Sidney Street Cafe's first-ever pastry chef, Christy Augustin, where she plated up to ten different desserts for dinner services. After graduating, she worked with Simone Faure as Pastry Cook at The Ritz-Carlton, St. Louis where she specialized in banquet production and continued to hone her craft under Nathaniel Reid on macaroons, chocolates and French pastries. Weldele later led the pastry program at Scape American Bistro and Crepes, where she assisted with banquet and restaurant menu planning as well as maintaining the pastry case. She most recently taught a three-week contemporary plated desserts class at her alma mater in Forest Park before beginning in her new role at Hyatt Regency St. Louis at the Arch.

With a wealth of knowledge in the kitchen, Weldele is pleased to return to the hotel scene again and has already begun her new role by making robust changes to the banquet dessert menu with new offerings, reflecting her creative style in desserts. In addition, all pastries are now freshly made in-house and Weldele is currently collaborating with the staff to launch a new wedding cake program, a passion of hers.
