June 6, 2013 - The Westin Riverfront Resort & Spa at Beaver Creek Mountain is pleased to announce that Maya, a Modern Mexican Kitchen & Tequila Bar by Chef Richard Sandoval, is now open at the award-winning resort.

Offering an upbeat, casual dining experience, Maya's approachable menu features Chef Sandoval's authentic Mexican flavors, blending traditional recipes with contemporary techniques to create dishes and cocktails that are familiar, fantastic and affordable. Fresh ingredients will be sourced seasonally from Maya's on-site garden.

Maya's menu features four types of Guacamole made table side, including Tuna Tartare and Bacon, as well as Mahi Mahi Ceviche, Queso Fundido and Chicken Flautas. Chef's Specials include Lobster & Shrimp Yucatan, Colorado Bass, Carne Asada and Slow Roasted Pork Carnitas. Maya also offers three types of Mole Dinner - Poblano, a classic mole of Puebla, Mexico; Pipian with toasted pumpkin seeds, tomatillos and cilantro and Amarillo, a vibrant blend of spices, hoja santa and chilhuacles amarillos.

Maya New York - Chef Sandoval's flagship restaurant - recently celebrated its 15-year anniversary with a complete redesign and expansion to include a Tequileria Maya. Maya Dubai opened at Le Royal Meridien Dubai in 2006 and Tamayo in downtown Denver, which opened in 2001, also recently underwent major renovations.

“We are excited to bring Maya to the Vail Valley as the concept has proven to be so popular in New York and Dubai,” said Chef Sandoval. “Summer is the perfect time to launch Maya Beaver Creek with the restaurant's amazing patio overlooking the Eagle River and the menu's refreshing flavor combinations.”

Maya also features a handmade Comal Tortilla Station and a bar and lounge offering more than 100 agave-based spirits and house-infused tequilas. Led by Beverage Director Rob Calfee, the Maya Bar offers handcrafted margaritas and cocktails, as well as personal bottle storage.

The warm, inviting decor at Maya is replete with antique Mexican tile-work, dark stained wood floors, communal tables, hand blown glass lanterns and stylish banquettes upholstered in sleek leathers. The expansive deck offers stunning Beaver Creek views and several outdoor fire pits.

The Westin Riverfront is inviting guests to experience Maya up this summer with the new Maya Dinning Package. Priced at just $199 per night, the offer includes a $50 Maya gift card and two complimentary margaritas. The offer is good through Dec. 15 but must be booked by June 30th.

Special summer at offerings at Maya include a daily Happy Hour from 4 p.m. to 6 p.m. featuring $2 tacos and $5 margaritas and Bottomless Margarita Brunch every Saturday & Sunday.
